PRODUCT INFORMATION



PhilRice Tapuy (rice wine) is a
naturally fermented alcoholic beverage made from cooked glutinous rice and a
starter culture locally known as “bubod.” This value-added rice-based drink is
a result of 15 years of extensive research and development by the Philippine
Rice Research Institute (PhilRice). Licensed to manufacture Tapuy with BFAD LTO
No. RDII-RIII-F-2167, PhilRice is able to use advanced processes in the
production, which guarantees a product of premium quality.

PhilRice is a government
corporate entity attached to the Department of Agriculture: created through
Executive Order 1061 on November 5, 1985 to help develop high-yielding and
cost-reducing technologies so farmers can produce enough rice for all
Filipinos.



On December 21, 2005, PhilRice
was issued a license to operate (LTO) as a manufacturer of alcoholic beverages
with number RDII-RIII-F-2167. The license is annually renewed.

Only the choicest glutinous rice
is used in the production of Tapuy. Prior to production, rice is inspected for
purity, moisture content, and cleanliness to ensure good results.

After being cooked, the
glutinous rice undergoes a natural fermentation process.

Tapuy is Pure



Once fermented, the fresh wine
is harvested, pasteurized, aged, filtered, clarified, bottled, and pasteurized
again for better preservation. No water is added during this process, unlike other
similar alcoholic beverages beverages which in their complete form are about
80% pure water.

Tapuy is Virgin, No Preservatives Added



Sulfites (commercially known as
campden tablets) are preservatives used in fruit or grape wines, which could
cause hangover and allergic reactions. However, PhilRice Tapuy is free of
sulfites or any other preservatives. Instead of using preservatives, PhilRice
Tapuy is pasteurized twice at 60-65°C, a process referred to as “low
temperature pasteurization”, and then sealed hermetically during bottling.



Sensory
Profile



The sensory profile of Tapuy was
achieved after rigorous sensory evaluations followed by statistical analysis.
With the help of experts from the Philippine Bartenders’ League, Tapuy sensory
profile was defined as a clear, full-bodied wine with luxurious alcoholic
flavor, moderate sweetness, and lingering finish.



Food
Pairing



Tapuy goes well with white
meats, pastas, and even pastries. It is also good for cocktails. At the
“Gastronomia 6” held at Holiday Inn-Clark in February 2010, the 1st prize
winner in the cocktail category used PhilRice Tapuy as one of the main
ingredients. Serve chilled.
