HIDISA is a dynamic company, located within the heart of Old Castilla in both Fuentesauco (Zamora) and Ledrada (Salamanca), origin of the Iberian products. With delicate equilibrium, it combines modern technologies while keeping the purest traditions of this region, from which Dionisio Sanchez begins his activity in the 40?, in the mountainous area of Salamanca.

Once the rising generation took over, their offspring, supported by a highly qualified team, is working wi
th XXI century mentality.

HIDISA, in its careful elaboration, evenly applies up-to-date methods to use traditional pro
cedures, inherited from their ancestors, what allow both plants to have ECC register and to be in the way to check and approve ISO standars.

Quartering, sausage and salting make use of the most advanced techniques and most modern infrastructures
, where ancient recipes achieve the authentic home-made taste.

The important process of cure is where HIDISA was able
to apply, depending on the product, the most suitable technique and the exact length of time to reach the optimum quality.


Aiming to guarantee the maximum quality of all its products, HIDISA has decided to vouch for raw materials self-supplying,
feeding in complete freedom their own, carefully selected, Iberian pigs.

For this reason, they belong a farm, full o
f holm-oaks, that hosts and feed with acorns the best members of such a noble breed.

ion, in the region of Salamanca, guarantees a suitable weather for this peculiar breeding in a natural environment full of aromatic native plants.
